Quick Alu Paratha

Alu Paratha traditionally takes some effort to make, not with this recipie. A shortcut to your favourite paratha, but no shortcut to its taste.

I am going to share my much loved and easy alu ka paratha. Usually most I know make stuffed alu paratha. They make the stuffing separately and then stuff the paratha. I learnt this easy recipe from my ma (thanks ma).

After coming to the West I found instant potato mix, which is not at all good for mashed potato but realy good for alu paratha , Bengali-style alur chop etc. To make this quick alu paratha you need:-
2 cups instant potato flakes (or three big boiled and mashed potatoes)
1 cup self-rising flour (alternatively, normal maida or simple whole wheat flour with baking powder)
salt
1 finely chopped red onion
1/2 bunch chopped cilantro
2 chopped green chilies and juice of 1/2 lemon.

First soak potato flakes with a little bit of water, then add all the ingredients. Kneed well, add a little more water if the dough is too tight. Roll them with dry whole wheat flour (ata) or maida. Whenever dough sticks to the rolling pin or rolling surface use a little more dry ata or maida. Fry with a little bit of oil, butter or ghee. I use minimal amount of oil. Make this quick alu paratha for your dinner tonight.
